Funk’n Waffle

Guy Fieri of Diners, Drive-Ins, and Dives had my mouth watering last night for Jive Turkey from Funk’n Waffles in Syracuse, NY. The waffle is made from stuffing—that’s right, stuffing—and it’s topped with smoked turkey, garlic mashed potatoes, and gravy. Fieri raved . . . said it was crispy, crunchy, and full of flavor. Must get the recipe.

  1. Saw this tonight as a rerun YUM. I paused it to video it with my phone so I could recall how to make it at home, but the DVR switched the channel on me. GRRRR

    • Hi! I watched that episode too and needless to say drooled. I wrote down the ingredients, but I can not find the amounts needed for the waffle part of the recipe. Perhaps we can experiment!

      Bread cubes
      Celery
      Caramelized onions
      Eggs
      Rosemary
      Chicken broth
      Salt & Pepper

  2. I think the waffle was made from stuffing, so if there’s a stuffing recipe out there that has the same basic ingredients as those used on the show, maybe, just maybe, that would work.

  3. This recipe for Leftover Stuffing Waffles is from Rachael Ray:

    INGREDIENTS

    1 tablespoon butter, melted
    3 to 4 cups leftover stuffing
    1/2 cup leftover cranberry sauce
    1 cup maple syrup
    A few slices of leftover turkey

    PREPARATION

    Preheat a waffle maker to medium-high heat. Once hot, brush with melted butter. Press a few cups of stuffing into the waffle iron, filling from corner to corner. Put as much stuffing into it as possible. Close the waffle iron to press it into the mold. Cook for 7-8 minutes, until the waffle is golden and crispy on top. Open waffle maker and let cool in waffle iron for 2 minutes and then remove.

    While your waffle is cooking, combine cranberry sauce and maple syrup in a small saucepot over medium heat. Stir to combine. Once hot, remove from heat.

    To serve, place a few slices of leftover turkey on top of the stuffing waffle and drizzle with cranberry maple syrup.
